The Bikini Cocktail

Yields 10 guests

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Premix (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Put all the components into a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, take off the stove allowing it to cool completely. Decant into an clean bottle, close it and refrigerate it chilled, where it will keep for around one month.

For the Premix: Mix all the liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, so it's perfectly clear.

When ready to serve: Add 85ml of your batch mix to a cocktail shaker packed with ice, and agitate gently for one minute to chill. Pour into a frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it using a quick spritz with the mandarin essence over the top.
